Saturated steam heating after venting of all air in the vessel is good for the combination of small cans in big baskets as it reduces the heating time with respect to the steam-air mixture.
The downside of this technology is that air overpressure cannot be used and therefore the method is limited to be used with small cans.
Air counterpressure is possible during cooling under full water immersion when the risk of can buckling is higher as there is no steam counterpressure.
The hybrid saturated steam -in combination with the steam spray alternative process-offers the choice of using big-size retorts with small cans as well as with any other type of container which will require air counter pressure, thus becoming the only truly universal high-quality retort process system.
